Take a moment, close your eyes and wallow in the creaminess.

This fudgy textured slice is perfect for an afternoon pick-me-up washed down with a nice cuppa. I keep a stash of these in the freezer at work because it really hits the spot for that little hit of sweet and is quite satiating when I’m a tad peckish. If you still eat sweet things you may want to use a little more honey, but for me, this recipe is just about perfect.

 

Ingredients

1/2 cup coconut oil
1 cup sunflower seed butter
1 tablespoon honey
1/2 teaspoon vanilla extract
2 tablespoons cocoa/cocao (a good organic one)
pinch of good salt
sprinkle of cinnamon

Garnish

50 grams 85% dark chocolate, thinly sliced
handful of sunflower seeds (optional)

 

Method

Line a square tin with baking paper.

Melt the coconut oil. Add the rest of the main ingredients and stir well – I used an electric hand mixer.

Pour the mixture into the tin and spread out evenly. Sprinkle the chocolate and sunflower seeds over the top. Put in the fridge until set.

Lift the slice out of the tin using the baking paper and cut into squares.

Store pieces in the freezer until you are ready to eat them (don’t be thinking you can take a slice of this with you in your handbag on a summer’s day … trust me, it doesn’t work out).
