Packed with protein they make a perfect afternoon snack.

If, like me, you are a child of the seventies, you will remember these fancy little hors d’oeuvres making an appearance at most social functions. I remember stealing them off the plate before the guests even arrived, and nowdays, every time I take a bite, it transports me back to being 5 yrs old again… and who doesn’t love that?! So, I know they are terribly out of fashion, but they taste super good, and are still super popular with kids!

Just halve the recipe if you want, but they last well in the fridge and make a great afternoon snack.

 

MAKES 24

Ingredients

12 eggs
2 teaspoons curry powder
1/3 cup of mayonnaise
handful of fresh herbs (I used chives & flat leaf parsley)
pinch of salt
freshly ground black pepper
sprinkle of smoked paprika (optional)

 

Method

Put eggs into a pot and simmer for 10 minutes. Run under cold water and peel the shells off. If you have kids…

Scoop out the yolks into a bowl. Crush yolks with a fork and mix in all the ingredients apart from the smoked paprika and a few herbs.

Spoon mixture back into the whites and sprinkle with the remaining herbs and some smoked paprika.

Leave out on a plate for your kids to steal.
