The good thing about these breakfast puds (apart from having pudding for breakfast!) is that you can make them up the night before and they are ready to eat in the morning with no additional prep. They travel well so make them in a pretty jar to take to work and be the envy of your workmates!




1/2 cup coconut milk
1/4 teaspoon vanilla extract
zest of 1/2 lime
1 tablespoon chia seeds
2 teaspoons linseed / flaxseed
2 teaspoons slivered almonds
1/2 cup frozen berries
1/2 scoop clean protein powder (optional)

garnish with

toasted coconut chips
few more frozen berries



Mix all the ingredients together and pour in to a jar. Garnish if you’re being fancy and pop in the fridge overnight (or for a minimum of 4 hours — it’s also great for an afternoon snack if you’re working out that night).
