Trying to work more coconut oil into your diet? These tasty little morsels are for you! The benefits of a good quality coconut oil can do incredible things for you – read all about it here – then make some of these treats to have on hand when you know you haven’t had enough fat in the day.

 

Ingredients

1 1/2 cups coconut chips
1/2 cup coconut oil
1/2 cup creamed coconut (coconut concentrate, coconut butter)
1 tsp vanilla extract
1 lime, zest and juice of (more if you like it more zingy)
pinch of flakey salt
handful of freeze dried lychees (or toasted almonds etc)

 

Method

Place all ingredients apart from the lychees into a food processor and blend until smoothish.

Roll a generous tablespoon of mixture in your hands to make a ball, then toss in your favourite freeze dried fruit (crushed up a bit), or sliced roasted almonds, toasted coconut and more lime zest or whatever takes your fancy on the day. Place on baking paper and pop in the fridge to harden.

Store these in the fridge – way in the back of the fridge so you have to go past the veges to get them!
