Stores well in the fridge — make extra for another meal.

Super quick and easy to make, and no need to even cook the beetroot! When beetroot comes out fresh in the shops — or even better, ready in your garden — it’s hard to go past this salad, winter or summer! And did you know beetroot can cheer you up? It has been shown to contain the compound betaine, which enhances the production of the body’s natural mood-lifter seratonin. So if you’ve hard a hard day, this might be exactly the side-dish you need!

 

SERVES 4-6

Ingredients

2 medium sized beetroot
handful of fresh mint, sliced finely
1 tablespoon of olive oil*
1 teaspoon of balsamic vinegar*
pinch of salt*

* good quality ingredients make a big difference, don’t be stingy, you won’t regret it!

 

Method

Put olive oil, balsamic vinegar and salt into a bowl and whisk until combined. Peel beetroot and julienne finely with a mandolin (or just grate if you’re not that fancy ;-) and put in the bowl. Toss together to coat the beetroot with the dressing. Add the finely sliced mint. Boom.

Make extra — this salad is even better the next day. Especially with leftover pork belly. Just saying.
